Celebrity Chef Claire Claire Robinson showed us some fun and quick food and cocktail pairings in collaboration with Pinnacle Vodka. Claire Robinson is known for her 5 ingredient recipes and incorporated that strategy in a few dishes that would be fitting for the Independence holidays or just BBQs  in general.

“I am excited to remind people that fresh and delicious seasonal cooking is just as easy as and so much more fun than some of the typical summer standbys. And when you pair a delicious dish with a really tasty cocktail, everyone gets excited,” said Chef Claire Robinson. “I was really inspired by all of the different pairings I could create with the amazing Pinnacle Vodka flavors – with so many to choose from, there really aren’t any limits to what you can create.”

1 part Pinnacle Raspberry Vodka
1 part Piña Colada Mix
1 Part Raspberry Sorbet
1 quarter part DeKuyper Blue Curacao Liqueur

This is a layered cocktail. In a shaker over ice add softened raspberry sorbet and Pinnacle Raspberry Vodka, stir to keep semi frozen as not to liquefy. Pour into the bottom of a rocks glass with the same ice. Next, top with more ice and pour in ice cold piña colada mix on top of the first layer of raspberry mix. Finally, top off with DeKuyper Blue Curacao Liqueur. Garnish with your own patriotic flare.

Mojo Pork Tenderloin
5 tbsp freshly squeezed orange juice
1(about 1 1/4 lbs) pork tenderloin
4 tbsp extra virgin oil, divided
1 tbsp chopped oregano
4 garlic cloves, fine chopped

Whisk orange juice, garlic, 2 tablespoons oil and oregano. Season with salt and pepper. Set aside

Pat pork dry. Run remaining oil on pork and place on a rack set over a baking sheet. Season with salt and pepper. Cook pork in oven until brown, about 25 to 30 minutes. Slice pork and serve with sauce.
